The Penn at Stoke Park: Tom Sellers Is Bringing the Country-House Dinner Back
Some restaurant openings arrive with a whisper. Others involve a two-Michelin-starred chef, an extraordinary Buckinghamshire estate and a private dining room complete with an aquarium. The Penn at Stoke Park belongs firmly in the second camp.
Opened on 26 October 2026, the restaurant has culinary direction from Tom Sellers, the chef behind London’s Restaurant Story. He is working alongside chefs Dom Robinson and Tom Phillips to create a menu that nods to the great British country-house table while bringing the idea very much into the present.
A dining room that knows how to dress for dinner
Named for John Penn, who helped shape the estate, The Penn has 48 covers and interiors by Studio Shayne Brady. Decorative plaster, artwork, a substantial limestone fireplace and warm layered details create the kind of atmosphere that makes an ordinary Wednesday feel like a special occasion.

Then there is the private dining room for eight. Guests enter via a wine corridor to find a beautifully secluded space complete with an aquarium. If a celebration is approaching, consider the venue-search problem solved.
The menu has serious intentions
With produce from the estate’s own garden and classical French technique, the opening selection includes Chiltern Hills venison, roast wild sea bass, Chateaubriand Rossini for two and a crème brûlée soufflé. Skipping dessert would feel like a tactical mistake.
The Penn forms part of a larger Stoke Park hospitality revival. The Piano Bar and Tea Room are joining the estate’s offering, with The Terrace & Glasshouse due to open for public dining in spring 2027. This is the beginning of a new chapter, not the final flourish.
