There’s a quiet revolution happening in the way we drink wine. Once upon a time, ordering a bottle of the house red felt like the height of sophistication. But now, wine lovers are choosing something altogether more liberated, a glass here, a glass there, each one an opportunity to explore.

According to new research from Coravin, the global leader in wine-by-the-glass systems, more than half of wine drinkers (50%) are now opting for wine by the glass more often than they did two years ago. It’s a shift driven by curiosity, health, and a desire for experience over excess.

Younger generations, particularly Gen Z, are leading the charge, 43% say they choose wine by the glass to explore different varieties, while 40% of Millennials love the freedom it gives to pair a new pour with each course. For Baby Boomers, the choice leans towards wellness, with 41% selecting single servings for lifestyle and health reasons.

And with that change in behaviour comes a new level of discernment. Wine drinkers are now willing to pay more for quality. One in four say they’d spend over £20 on a single glass, and over a third regularly spend between £16–£20, proof that luxury is now measured in taste, not volume.

Enter The Coravin Guide...the world’s first digital guide dedicated to the best wine-by-the-glass menus across the globe. Designed to help people enjoy wine their way, it’s a celebration of freedom and discovery, spotlighting restaurants, hotels, bars, and private clubs that share Coravin’s “any wine, any time, any amount” philosophy.

“Wine by the glass should be about discovery, not limitation,” says Coravin Founder Greg Lambrecht. “Too often people feel they need an occasion to open a special bottle when out, or they miss out because a full bottle feels like a commitment. The Coravin Guide gives wine lovers the freedom to find venues that share that same philosophy, where you can taste, explore and savour wine one glass at a time.”

Launching on 30th September, the digital guide will initially feature London, Sydney, Melbourne, Milan, The Netherlands and California, with more destinations to follow. Venues are listed through a bespoke tiering system, from One Glass (20–40 wines by the glass) to Three Glasses (over 60), plus Greg’s Hidden Gems for smaller, standout selections.

Intuitively searchable by region, occasion, or wine style, The Coravin Guide promises to be the ultimate companion for those who love the ritual of wine — without the restriction of a full bottle.

Because true luxury isn’t about how much you drink — it’s about how deeply you enjoy every sip.
